My brother Harrison bought me some WEDO Gluten-Free Banana Flour for Christmas this past year, and ever since then I've been using it in almost all of my recipes! I'm obsessed! It is so amazing! It works just like wheat in so many recipes! Banana Flour is healthy, low-sugar, grain free, paleo, and full of nutrients! The only ingredient is green bananas!!

So since we are officially into Fall, I decided my first recipe to post should include pumpkin! These pancakes are super simple to make and are delicious! You only need a few ingredients to make these amazing paleo pancakes!
These pancakes are seriously the BEST paleo pancakes you will ever have! I am not joking. You all need Banana Flour in your life!!!!
Pumpkin Spice Pancakes
Ingredients:
- 1/2 cup Wedo Banana Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Pumpkin Pie Spice
- 1/2 teaspoon Ground Cinnamon
- 1/4 cup Organic Pumpkin Puree
- 3 eggs
- 2 tablespoons Maple Syrup
- 1/2 cup Honey Almond Milk
- 1 tablespoon Apple Cider Vinegar
- Pinch of Salt
- 1 tablespoon Coconut Oil (to grease pan)
Add banana flour, baking powder, spices, pumpkin puree, eggs, maple syrup, almond milk, apple cider vinegar and salt to a blender. Blend until thoroughly combined.
Heat coconut oil in a pan over medium heat. Once pan is heated, add about 1/3 cup of batter in pan to make a 4 inch pancake. Cook for about 3 minutes, or until bottom of the pancake is golden and firm. Flip and cook for about another 3 minutes. Repeat until all batter is used up.
Recipe serves about 4 people.

I saw your instagram post from about a week ago for just plan chocolate chip banana flour pancakes. Can you share that recipe with me? Would I just use this same recipe and omit the pumpkin puree and add more milk? I'm dying to make them in the morning!
ReplyDeleteHi Erin!! To make these chocolate chip pancakes, you need to omit the pumpkin puree, pumpkin spice, and cinnamon. Add in 1 teaspoon of vanilla extract and chocolate chips to the batter :) Let me know when you try them out, tag me on Instagram!!

I haven't gotten around to taking any photos yet (I'm normally digging into these as they come off the griddle haha) but I've been making the banana chocolate chip version of these a few nights a week and they're so delicious! In addition to the baking powder I've also been adding 1/2 tsp cream of tarter and find they puff up even more. The flavor of these reminds me so much of the grain-based chocolate chip banana bread my mom used to make when I was a little girl. It brings me so much joy to be able to re-experience that flavor and deliciousness from childhood in a more nourishing/healthier form. Thanks so much :)
